Black Bean & Chorizo Tostada With Roasted Tomato Salsa Recipe

Ingredients

• 500g BREDDOS Toluca-style Red Chorizo
• 12 corn tacos
• crème fraîche
• 1 onion, peeled and sliced
• 6 cloves of garlic, peeled and finely chopped
• 2 fresh bay leaves
• 2 avocado leaves (or 2 star anise)
• 2 tbsp of lard
• 1 tbsp dried oregano
• 1 tsp dried epazote (if available)
• 1 tin of black beans
• 300ml water
• 6 small tomatoes
• 3 fresh jalapeños
• 6 cloves of garlic
• 1 shallot, halved, skin left on
• ½ a bunch of fresh coriander
• 2 limes
• 1 tbsp groundnut oil
