Ingredients

• 1 ½ lbs boneless skinless chicken breast
• 2 cups red enchilada sauce
• ½ white onion, diced
• 1 ½ teaspoon cumin
• 1 ½ teaspoon garlic powder
• 1 ½ teaspoon chili powder
• ½ teaspoon kosher salt
• 1 can black beans, drained and rinsed
• 7-8 small corn tortillas, cut into squares (5-inch tortillas)
• ½-1 cup shredded Mexican blend cheese, optional
• Optional toppings: chopped cilantro, avocado, or sour cream
