Ingredients

  • 500g beef or mutton shank, cut into pieces
  • 2 onions, finely sliced
  • 4 cloves of garlic, minced
  • 2-inch piece of ginger, grated
  • 1/4 cup cooking oil or ghee (clarified butter)
  • 2 bay leaves
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1/2 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp red chili powder (adjust to taste)
  • Salt to taste
  • 6-8 cups water
  • 2 tbsp wheat flour (for thickening)
  • Fresh coriander leaves and green chilies for garnish
  • Sliced ginger for garnish
  • Lemon wedges for serving
