Ingredients

  • 300 g skinless chicken breast fillets
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried sage or marjoram
  • 2 tablespoons sunflower oil
  • 1 onion, sliced
  • 1 green capsicum, seeded and sliced
  • 2 stalks celery, sliced
  • 2 cloves garlic, crushed
  • 2 cups (400 g) long–grain rice
  • 1 litre chicken stock, preferably homemade
  • 100 g cooked smoked ham, cubed
  • 100 g chorizo or other spicy sausage, sliced
  • 1 can Italian cherry tomatoes, or 1 can chopped tomatoes, about 400 g
  • Tabasco sauce
  • salt and pepper
  • 4–6 spring onions, trimmed and chopped to serve
  • coarsely chopped fresh parsley
