• 2 large potatoes - diced
• 1 dry red onion – diced
• 4-5 spring onions including their greens
• 1 tbsp. tomato paste
• 1/3 bunch of fresh dill – finely chopped
• 1/2 cup extra-virgin olive oil
• Salt, freshly ground pepper
