Ingredients
- 1 small lebanese cucumber, peeled in intervals, deseeded and thinly sliced
- 1 small red onion, thinly sliced
- salt
- 2 eggs
- 6 large potatoes, desiree or russet are good
- white pepper, to season to taste
- 1 small carrot, peeled and cut into thin half moons
- 1 tablespoon rice vinegar
- 1 cup kewpie mayonnaise
- 1/2 bunch chives finely diced
