Lamb Leg Steak Salad Recipe

Ingredients

• 2 lamb leg steaks
• 15g of unsalted butter
• 2 sprigs of oregano
• 400g of black beans, (1 tin, drained)
• olive oil
• 1 banana shallot, finely sliced
• 1 garlic clove, finely sliced
• 200ml of vegetable stock
• sea salt
• black pepper
• 2 oranges
• 1 tsp honey
• 1 tsp Dijon mustard
• 2 tsp white wine vinegar
• 50ml of light olive oil
• 1 small red chilli, deseeded
• 4 tomatoes, ripe
• 20g of rocket, or watercress
• 1 tsp oregano, roughly chopped
