- 2.5kg smoked gammon joint, tied
- 2 onions , skin on, halved
- 2 bay leaves
- 1 thyme sprig
- 2 carrots , roughly chopped
- 6 cloves
- 8 black peppercorns or 1 tsp pink peppercorns, if you have them
- 100g honey
- 3 tbsp hot sauce
- 1-2 tsp chilli flakes
