Carrot Cake with Pineapple and Coconut - Finding Caroly

• 2 c. flour
• 3/4 t. nutmeg
• 3/4 t. allspice
• 1/2 t. salt
• 1 1/2 t. cinnamon
• 2 t. baking soda
• 2 c. sugar
• 1 c. sunflower oil
• 3 eggs
• 1 t. vanilla divided
• 1 c. crushed pineapple lightly drained
• 2 c. finely shredded carrots (5-6 medium sized)
• 3/4 c. sweetened flaked coconut
• 3/4 c. golden raisins
• 1/2 c. of finely chopped pecans or walnuts (optional)
• 1 8 oz. package of light cream cheese - softened
• 1/2 c. of softened butter
• 1/2 box of powdered sugar (8 oz.)
• 1/2 t. vanilla
• 1/4 t. salt
