• 1 cup frozen corn
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 12 large eggs
• 1/3 cup milk
• 8 corn tortillas, cut into quarters
• 2 cups Mexican-style cheese, shredded
• tomatoes, to taste, diced, for topping
• cilantro, to taste, chopped, for garnish
