• 2 tbsp. (30 ml) olive oil
• 1 French shallot, finely chopped

• 1 tbsp. (15 ml) chopped oregano

• 2 cups (500 ml) couscous
• ¼ lb. (112 g) chorizo sausage, diced
• 4 cups (1 l) chicken stock

• 2 tbsp. (30 ml) chives, finely chopped

• 1 cup (250 ml) plain yogurt
• 2 tablespoons (30 ml) of lemon juice
• Zest of 1 lemon

• 1 tablespoon (15 ml) of thyme
• 1 tablespoon (15 ml) of gray shallot
• 2 tablespoons (30 ml) of olive oil
