Ingredients

• 2 TBSP olive oil
• 2 shallots, thinly sliced
• 1 bunch swiss chard, stems diced and leaves chopped (keep separate)
• 2 garlic cloves, minced
• 1 pint cherry tomatoes (preferably sungold), halved
• ¼ tsp red chili flakes
• Kosher salt and freshly ground black pepper
• ¼ cup tomato paste
• ¼ cup Portland 90 Vodka
• 1 can white beans (such as cannellini or great northern)
• ¼ cup heavy cream
• Grated parmesan and chopped Italian parsley to garnish
