Ingredients

• 1 Tbsp extra virgin olive oil
• 1 lb basil chicken sausage (any sausage can be used)
• 1/2 sweet onion, chopped into 1/2 inch pieces
• 1 lb red potatoes, chopped into 1/2 inch pieces
• 2 garlic cloves, minced
• 1 pint cherry tomatoes, sliced in half (divided)
• 1 Tbsp chopped rosemary
• 1 Tbsp chopped basil
• 1/2 tsp kosher salt
• 1/2 tsp fresh ground black pepper
