Duck with Pineapple Recipe - Great British Chefs

Ingredients

• salt
• 100g of caster sugar
• 1 pinch of coriander seeds
• 2 star anise
• 1 pinch of pink peppercorns
• 1 fresh pineapple, small
• 150g of pineapple juice
• vegetable oil
• 200g of desiccated coconut
• 1 tbsp of cocoa powder
• 1 tbsp of icing sugar
• 15g of honey
• 20ml of light soy sauce
• 150g of cashew nuts
• 1 tsp miso paste
• 5g of sea salt
• 1 handful of baby watercress
