Pennsylvania Pumpkin Risotto — PA Eats

Ingredients

• 1/2 lb bacon, diced
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 quart chicken stock
• 1 cup heirloom pie pumpkin puree
• 1 cup arborio rice
• 1/2 cup cooking white wine
• 2 tablespoons butter
• 1/2 block (4 oz.) Kinfork cheddar cheese (or another local cheddar)
• Salt and pepper to taste
