Chicken In A Bag

Ingredients

• 1 carrot thinly sliced on the diagonal
• 1 parsnip thinly sliced on the diagonal
• 1 courgette thinly sliced on the diagonal
• 2 red onions finely sliced
• 3 cloves garlic crushed
• 3 springs of thyme
• 5 sage leaves finely sliced
• 3 tomatoes roughly chopped
• 80g chorizo chopped into 1 cm cubes
• Salt and pepper
• 1 tablespoon butter
• 12 chicken thighs skinless and boneless
• 125 chicken stock
• large handful parsley roughly chopped
• juice of 2 lemons
• 50g parmesan grated
• 50g pine nuts optional
• a few handfuls baby spinach to serve
