Ingredients
- 800g Nanna Tate potatoes, peeled and cut into chunks
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 10 curry leaves
- 2 green chillies, finely chopped
- 5cm ginger, finely grated
- 1/2 tsp ground turmeric
- 1 tsp fine sea salt
- 1/2 lemon, juiced
- 1/2 bunch coriander, finely chopped
- 200g gram flour
- 1/2 tsp chilli powder
- 1/2 tsp baking powder
- 230ml of water
- vegetable oil, for deep-frying
- 2 bunches coriander, a few leaves reserved for garnish
- 1/4 bunch mint, leaves picked
- 1 green chilli
- 1 garlic clove
- 1 lime, juiced
- 1 tbsp roasted peanuts
- 2 tbsp water
- Lemon zest
- 1 pinch cayenne pepper
