Ingredients

  • 4 tbsp olive oil, (divided)
  • 1.5-2 lbs salmon
  • ½-1 tsp kosher salt, (depending on size)
  • 1 tbsp coconut sugar or brown sugar
  • Black pepper
  • 4-6 sprigs thyme ((optional))
  • Zest from 1 orange
  • ½ cup freshly squeezed orange juice ((from about 2 oranges))
  • ¼ cup rice vinegar
  • 1 clove garlic, (smashed)
  • 1 tsp fresh thyme ((or about 2-4 sprigs))
  • 2 tbsp mellow white miso paste
  • 1 tsp dijon mustard
  • 4 tbsp butter, (chilled, cut into cubes)
  • 2 oranges, (outer skin/pith trimmed off, cut into rounds, then quarters (or any other bite-sized shape you want, about 1 cup))
  • ½-1 cup thinly sliced scallions
  • ¼ cup dried cranberries
  • 2 tbsp lemon juice
  • Pinch of kosher salt
