Loaded Baked Potato Soup - A Blonde's Moment

Ingredients

• 30 ounces frozen hashbrowns, I used the cubed
• 1 small onion, chopped
• 28 ounces chicken stock
• 1 can cream of mushroom
• 8 ounce low fat cream cheese, at room temperature
• 1 cup shredded cheddar cheese, plus more for garnish
• 3-4 green onions, chopped
• 5-6 slices turkey bacon, chopped
• salt and pepper, to taste
