  • (3-4 pieces (11/2-2lbs)) Alaskan Cod, 6oz portion
  • (1 Tbsp) Olive oil or bacon grease
  • (1 tsp) Butter
  • (2 medium (about 2 cups)) Yellow onions, chopped
  • (1/2 cup, optional) Dry white wine or sherry
  • (3 large (about 1 1/4 pounds)) Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
  • (2 cups) Clam juice & clams or sub chicken broth
  • (1-2) Bay leaf
  • (1 Tbsp (fresh) or 1 tsp (dried)) Fresh thyme or dried thyme
  • (1 1/2 tsps) Sea salt
  • (1/4 tsp) Ground black pepper
  • (1 tsp) Old Bay
  • (1 1/2 cups) Heavy cream
  • (2 Tbsps) Fresh parsley, chopped
  • (to taste) Optional: spicy red pepper flakes
