A favorite raw kimchi preparation in my family is this bibimguksu, which just means “mixed noodles.” For a cold noodle dish, this is surprisingly comforting.
Ingredients
- 6 ounces somyeon or other thin wheat noodles
- 2 large eggs
- 1 tablespoon gochugaru red pepper powder
- 1 tablespoon sugar
- 1 tablespoon toasted Asian sesame oil
- 1 tablespoon toasted sesame seeds
- ½ cup finely chopped drained napa cabbage kimchi (store-bought or homemade)
- 1 pint grape tomatoes (halved)
- 1 small cucumber (julienned - for serving)
