Rockfish Ceviche | Town & Country Markets
Ceviche is a Latin American dish of raw fish, typically served as an appetizer, where fresh citrus juice “cooks” the fish by denaturing the protein making the fish firm and opaque.
Ingredients
- 1 pound fresh rockfish, skinned and de-boned (or mahi mahi, salmon, sole, halibut)
- 1/2 red onion, thinly sliced
- 1-2 garlic cloves, finely minced
- 1 serrano chile, seeded, finely minced (or jalapeño)
- 1/2 cup freshly squeezed lime juice (about 6 limes)
- 2 tablespoons freshly squeezed orange juice, optional
- 1/2 teaspoon sea salt (or kosher)
- 1/2 cup cilantro, chopped
- 1 cup cherry tomatoes, halved (or diced tomato)
- 1 cup diced cucumber
- 2 tablespoons olive oil
- 1 avocado, cubed, optional
- Tortilla chips, for serving
