  • 2 Tbsp unseasoned rice vinegar

  • 1½ tsp grated fresh ginger
  • ½ cup/100ml avocado or other neutral oil
  • 2 Tbsp chili garlic sauce or sambal oelek
  • Kosher salt and freshly ground black pepper
  • 8 oz/225 grams day-old cooked jasmine rice
  • Two 12-oz pieces fresh, sushi-grade yellowfin tuna loin (each about 1- to 1½-inch thick)
  • 2 Tbsp sesame seeds
  • 4 cups/100 grams mixed salad greens
  • 1 cup/100 grams sugar snap peas, sliced
  • 1 cup/10 grams fresh mint leaves
  • ¼ cup store-bought fried onions or shallots
