Ingredients

• 1 lb (450 g) beef stew meat, cut into 1-inch cubes
• 2 tbsp (30 ml) olive oil
• 1 medium onion, diced
• 2 cloves garlic, minced
• 3 medium carrots, sliced
• 2 stalks celery, diced
• 1 bell pepper, diced (red or green)
• 4 cups (950 ml) beef broth
• 1 can (14 oz/400 g) diced tomatoes with juice
• 2 bay leaves
• 1 tsp (5 g) dried thyme
• Salt and pepper to taste
• Fresh parsley, chopped (optional)
