  • 5 to 6 lb. brisket flat
  • ⅓ cup brisket rub
  • 2 tbsp. canola oil
  • 2 cups beef stock, divided
  • 1 large sweet onion, thickly sliced
  • 6 large garlic cloves, peeled and smashed
  • 12 oz. coffee stout beer
  • ¼ cup balsamic vinegar, plus more to taste
  • 1 to 2 dried mulato chiles or ½ tsp. red chile flakes
