• 4 chicken thighs & 4 chicken drumsticks
• 2 red onions
• 1 red pepper
• 3 carrots
• 2 garlic cloves
• A thumb of ginger
• 40g peanut butter
• 40g honey
• 400ml coconut milk
• 50g tamari
• 300g white basmati rice
• 1 lemon
• 2 tbsp olive oil
• Sea salt
• Freshly ground pepper
• 800ml - 1ltr boiling water
• 2 tbsp cold water (optional)
