Olive Ascolane | Fattoria La Vialla

Ingredients

• 50 green olives in brine (the largest you can find)
• 50 g lean pork
• 50 g beef
• 50 g chicken breast
• 50 g cured ham
• 50 g grated pecorino cheese
• 1 egg + 1 yolk
• ¼ onion
• 1 piece of celery stalk
• ½ carrot
• ½ glass dry white wine
• 1 pinch of grated lemon rind
• 1 pinch of nutmeg
• 100 g breadcrumbs
• 3 tbsp Extra Virgin Olive Oil (plus 2 glassfuls for frying)
• 2 tbsp béchamel sauce
• salt
• pepper
• 50 g butter
• ½ l milk
• 50 g plain flour
• ½ tsp grated nutmeg
