• 1.2-1.4 kg straight scored pork loin joint
• 1 tsp vegetable oil
• 1tbsp table salt
• 12 sage and onion stuffing balls
• 1 bag wild rocket
• 1 small bulb of fennel, finely sliced
• 1 pink lady apple
• 2 tbsp apple sauce
• 3 tbsp mayonnaise
• Salt and cracked black pepper
• 1 loaf of your favourite crusty sour dough bread
• 1 jar apple sauce
• 100g Gruyere cheese, finely grated
