- ¼ cup olive oil
- 2 garlic cloves, crushed
- 1 red onion, thinly sliced
- ½ tsp fennel seeds
- ½ tsp coriander seeds
- ½ tsp ground cinnamon
- ¼ cup balsamic vinegar
- 1 medium eggplant, sliced on the diagonal, scored
- 80g baby rocket leaves
- 4 radishes, cut into wedges
- 400g can cannellini beans, rinsed, drained
- ¼ cup dill leaves
- ¼ cup mint leaves
- Tzatziki, lemon wedges, to serve.
