Chicken Cutlets in a Tarragon Garlic Tomato Sauce – Fustini's Oils & Vinegars

Ingredients

• 2 chicken breasts
• 2-3 tablespoons Fustini’s Herbs de Provence olive oil
• salt and pepper to taste
• 4-5 tomatoes, roughly chopped
• 3-4 garlic cloves, chopped finely
• ½ medium onion, chopped
• 1/2 teaspoon fresh tarragon
• ½ teaspoon red pepper flakes
• 1 teaspoon dried basil flakes or freshly chopped basil
• cooked pasta, risotto or rice for serving
• grated parmesan for garnish
