Ingredients

• 2 Tb olive oil
• 1 large eggplant, chopped into 1 inch cubes
• 5 medium tomatoes, chopped
• 1 tsp turmeric
• 1/2 tsp cumin
• 1/4 tsp coriander
• 1/4 tsp cinnamon
• pinch nutmeg
• 1 lb okra, trimmed and chopped into 1 inch pieces
• 2 handfuls of cilantro, chopped
• salt and pepper, to taste
