Ingredients

• 300 g Minced beef
• 300 g Minced pork
• 1 Onion (small, finely chopped)
• 3 cloves Garlic (minced)
• 50 g Breadcrumbs
• 1 Egg (medium)
• 2 tbsp milk (full fat)
• 1 tsp Smoked paprika
• ½ tsp Thyme (dried)
• 3 tbsp Olive oil (extra virgin)
• 400 g Tomatoes (tinned, chopped)
• 2 tbsp Tomato Puree
• 200 ml Red wine (Rioja Crianza preferred)
• 150 ml Beef stock
• 1 Bay leaf
• 2 tbsp Fresh Parsley (chopped)
• Sea salt (to taste)
• Black pepper (freshly ground, to taste)
