Sticky Date & Toffee Pudding

Ingredients

• For the pudding:
• 250 g pitted dates, chopped
• 250 ml boiling water
• 5 ml bicarbonate of soda
• 220 g cake flour
• 5 ml baking powder
• 1 ml salt
• 120 g First Choice Butter at room temperature
• 160 g castor sugar
• 5 ml vanilla essence
• 2 eggs
• 1 Granny Smith apple, peeled and grated
• 60 ml First Choice Yoghurt
• For the sticky tofee topping:
• 160 g First Choice Butter
• 200 g soft brown sugar
• 250 ml First Choice Cream
