Ingredients

• 5-6 slices dried mushrooms such as porcini
• 3/4 cup white wine (dry)
• 6 tbsp butter
• 500g/1lb mixed fresh mushrooms thinly sliced
• 1 onion finely diced
• 2 cloves garlic crushed
• 1 tsp finely chopped rosemary
• finely grated zest of 1 lemon
• 2 cups Arborio rice
• 6 cups hot vegetable stock or more if needed
• salt and freshly ground black pepper to taste
• 2 tbsp lemon juice to taste
• 1/2 cup finely grated parmesan
