Matoke – Meera Sodha
Comforting matoke, a rich Ugandan dish made from steamed plantains and aromatic spices, perfect for cold winter nights. Yields enough for 4.
Ingredients
- 6 x small plaintain (small unripe plantains – available in most Asian grocers and many African too)
- 1 large Spanish onion, chopped
- 3 large ripe tomatoes, chopped
- 80g of coriander, chopped
- ½ teaspoon cumin seeds
- 12 black peppercorns
- 1.5 tablespoons grated ginger
- 1 tablepoon finely chopped or crushed garlic
- 1 tablespoon tomato puree
- 1.5 green chillies
- ¾ teaspoon salt
- 2 tablespoons oil
- 1/3rd teaspoon turmeric
