Chicken Stew with Lemon

Ingredients

• 9 - 12 oz. chicken pieces (skinless breast, thighs, etc.)
• 4 T. flour
• 1/2 t. black pepper or Cajun seasoning
• 2 T. mild olive oil
• 4 mushrooms, sliced (optional)
• 1 cup yellow onion, chopped
• 1 cup sliced carrots
• 1 large potato, diced
• 1/2 t. dried dill
• 2 cloves
• 1/2 t. crumbled dry thyme
• 1 t. celery salt
• 2 T. dry sherry
• 1/2 cup dry white wine
• 1/2 cup water
• 4 T. lemon juice
