  • 1 Tbsp Piment d’Ville, plus additional for sprinkling
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 2 cloves garlic, peeled and sliced
  • ¾ cup diced onion
  • ½ cup diced zucchini
  • ½ cup diced bell or sweet pepper
  • ¼ cup pitted olives
  • Salt
  • 14-ounce can crushed tomatoes or tomato sauce
  • 4 eggs
  • 4 ounces feta, crumbled
  • Chopped parsley or cilantro
