Ingredients

• 3 lbs Yukon Gold potatoes, scrubbed and cut into 1-inch chunks
• 3/4 cup mayonnaise
• 1/4 cup chopped dill, plus more to garnish
• 3 tbsp distilled white vinegar
• 2 tbsp Dijon mustard
• 1/2 red onion, peeled and finely chopped
• 1 cup crushed salt and vinegar potato chips
