Quesadillas with Salmon Spread – Aoraki Salmon – Oak Smoked Fresh Water King Salmon

Ingredients

• 1 x Aoraki Smoky Salmon Spread 180g
• 2 tablespoons olive oil
• 3 cloves garlic
• 1 x tin black beans
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon smoked paprika
• 1 x 12 pack tortillas (we used corn tortillas)
• 1 medium red onion sliced into rounds
• 1 cup corn (tinned, frozen or fresh)
• 2 cups cheese, grated (we used tasty but Colby or edam is fine too)
• 3 avocados
• Juice 2 limes
• Small handful coriander, roughly chopped
