Ingredients

• 125 ml ricotta cheese
• 60 ml julienned basil
• 2 ml kosher or sea salt
• 2 ml pepper
• 4 plum tomatoes, diced
• 1 red onion, minced
• 1 clove garlic, minced
• 30 ml olive oil and balsamic glaze each
• 8 eggs
• 60 ml grated Parmesan cheese
• salt and pepper to taste
• basil leaves to garnish
• ciabatta or focaccia bread to serve
