Ingredients

• 1 tbsp olive oil
• 1 small red onion chopped
• 1 small carrot finely diced
• 1/2 celery stick finely diced
• 2 cloves garlic chopped
• 400 g lamb mince
• 1 tsp fennel seeds
• 1/2 tsp allspice
• 5 dried bird's eye chilis crushed
• 2 tbsp tomato puree
• 3 anchovy fillets
• 1 bay leaf
• 1 tbsp fresh thyme
• 1/2 cup red wine
• 1 can chopped tomatoes
• 25 g pecorine Romano cheese finely grated
• 100 g whole green olives
• Salt and pepper to taste
