Ingredients

  • 2 green cardamom pods 1 black cardamom pod
  • ½-inch (1-cm) cinnamon stick
  • 1 whole clove
  • 1 tablespoon chironji or charoli (melon seeds)
  • 8 cashews
  • ¼ teaspoon kewra (screw pine) water
  • Generous Pinch of saffron threads
  • 4 teaspoons vegetable oil
  • 3 cloves garlic, chopped
  • ½-inch (1-cm) piece fresh ginger, chopped
  • 2 cups (450 grams) canned red kidney beans
  • 3 green chiles, stemmed and chopped
  • ½ teaspoon caraway seeds
  • ½ teaspoon ground white pepper
  • ½ teaspoon table salt
  • 2 tablespoons grated khoya/mawa (unsweetened solid condensed milk)
  • 1 medium red onion, cut into thin rings
  • ½ tablespoon freshly squeezed lemon juice
  • 1 sprig fresh mint
