  • 4 large or 8 medium bull’s heart tomatoes (or similar), big enough for stuffing
  • 3 round shallots, finely chopped
  • 250 ml dry white wine
  • 250 g Toulouse sausage meat or coarsely minced pork
  • 250 g minced veal
  • 2 tablespoons chopped flat-leaf parsley leaves
  • ½ teaspoon chopped thyme leaves
  • ½ teaspoon chopped rosemary leaves
  • Zest of ½ lemon
  • Pinch of chilli flakes
  • 2 garlic cloves, finely chopped
  • 1 heaped tablespoon dried breadcrumbs
  • 2 tablespoons crème fraîche
  • Olive oil, for frying
  • Salt and freshly ground black pepper
