- 3 round shallots, finely chopped
- 250 ml dry white wine
- 250 g Toulouse sausage meat or coarsely minced pork
- 250 g minced veal
- 2 tablespoons chopped flat-leaf parsley leaves
- ½ teaspoon chopped thyme leaves
- ½ teaspoon chopped rosemary leaves
- Zest of ½ lemon
- Pinch of chilli flakes
- 2 garlic cloves, finely chopped
- 1 heaped tablespoon dried breadcrumbs
- 2 tablespoons crème fraîche
- Olive oil, for frying
- Salt and freshly ground black pepper
