Chicken, Cider and Apple Casserole

Ingredients

• 2 tbsp Flour
• 25 g Butter
• 1 piece Apples One large or two small, peeled and sliced
• 175 ml Chicken Stock Or vegetable stock
• 175 ml Dry Cider
• 4 piece Chicken Breasts Boneless but skin-on ideally
• 0.5 tsp Thyme Fresh, finely chopped
• 1 pinch Salt To taste
• 1 pinch Black Pepper To taste
• 3 tbsp Light Olive Oil
• 1 piece Onion Large, sliced
• 1 piece Carrot Large, sliced
• 2 stalk Celery Trimmed and sliced
