Ingredients
- 4-5 tablespoons Stuart’s Spices Seven Pepper Rub
- 4 large ears corn, shucked and washed
- 1/2 cucumber, diced
- 1/2 bunch cilantro, washed and chopped
- 2-3 radishes, diced
- 1/2 cup cotija or feta cheese
- 3 tablespoons mayonnaise
- 2 limes for juicing
- Optional : pickled red cabbage or onion
