Manchego Lamb Burgers with Fried Potato Chive Cakes

Ingredients

• 1 large potato, peeled and grated
• Kosher salt and pepper, to taste
• 2 T chives, chopped
• Vegetable oil
• 12 oz. ground lamb
• 4 oz. ground pork
• 3 cloves garlic, minced
• 1 t. parsley, finely chopped
• 3 T mayonnaise/Dijon mustard blend
• 4 slices Spanish Manchego cheese
• 4 leaves of butter lettuce
• 4 onion or hamburger rolls
