Ingredients

• 3 medium aubergines (750g)
• 1⁄2 tbsp table salt, plus more as needed
• 1 tbsp sesame seed paste
• 50ml water
• 1 lime, juiced
• 2 tsp malt vinegar
• 1 tbsp thick yoghurt
• 1 garlic clove, pressed
• 1 tsp ground black pepper
• 10g chopped parsley, as garnish
• 2 to 3 tbsp virgin sesame oil, as garnish
• Bread, for serving
