Ingredients

• 4 potatoes cut into 1-cm thick slices
• 1 aubergine cut into 1-cm thick slices
• 70 ml extra virgin olive oil
• 2 onions, finely chopped
• 3 cloves garlic, coarsely chopped
• Dried oregano to taste
• 800 g canned whole peeled tomatoes
• 50 g butter
• 50 g flour
• 500 ml hot milk
• Sea salt to taste
• Black pepper to taste
• Nutmeg to taste
• 200 g Parmesan cheese
