PEI Potato and Leek Soup - PEI Potatoes

Ingredients

• 3 large PEI Yukon Gold Potatoes, peeled and diced
• 2 tbsp Butter
• 2 cup leeks, washed and chopped
• 1 medium onion
• 1 tbsp Summer Savoury
• 0.25 cup flour
• 5 cup chicken stock or vegetable stock
• 0.5 tbsp fresh thyme, removed from stems
• 1 cup milk
• 1 dash salt and pepper to taste
