• 1 recipe Gingersnap Cut-Out Cookie dough, through dividing and chilling dough
• 1 ¾ cups granulated sugar, divided
• 4 Tbsp. unsalted butter, melted
• 2 ½ lb. cream cheese, room temperature
• ¾ cup heavy cream
• ¼ cup molasses
• 5 eggs
• 2 Tbsp. all-purpose flour
• 1 tsp. minced lemon zest
• 1 Tbsp. each pure vanilla extract and lemon juice
• 2 ½ tsp. ground ginger
• 2 tsp. each ground cinnamon and freshly grated nutmeg
• ½ tsp. ground cloves
• ¼ tsp. table salt
• Coarse white sugar, optional
